Oatmeal banana muffin is gluten free



Hi people,
Still sticking to the yummy recipes of bakery, today we are gonna enjoy the oatmeal banana muffins, totally gluten free. So don't shy away enjoy them and later sweat it out with my workout programs for a happy feeling.

We can easily become bakers, believe me, all you need to do is, spare some time and bring out your lovely smile along with your favourite kitchen bakery weapons. lets get started.

WHAT YOU NEED?

2 large mashed  bananas
1  large egg
½ cup apple Butter (its easy to make using blender, cooker or microwave)
½ cup low fat milk
½ cup plain low fat yogurt
1½ cup oat flour (just put oats in the food processor and in under a minute you have it)
1¼ cups oats of your choice 
1 teaspoon baking soda
2 teaspoon baking powder
½ teaspoon nutmeg (jayaphal in hindi)
1 teaspoon cinnamon
½ teaspoon salt
¼ cup brown sugar - packed

½ cup chopped walnuts – divided

NEXT:

  • Preheat your oven to 400 degrees, if using muffin pan or baking cups spray a bit of cooking oil.
  • Take a large bowl, get all the wet ingredients, including your banana and yogurt and mix well and then leave it for a while
  • Pick another bowl and add oat flour, oats, brown sugar, baking soda, baking powder, cinnamon, nutmeg and salt.
  • Mix both the dry ingredients and wet ingredients (remember you have 2 bowls of them) until it settles right, put in your walnuts and mix again.
  • Now take out the batter and fill them up in the pan or cups. you can fine chop some more walnuts and sprinkle its crumbles on as toppings. 
  • Leave it for 20 mins to bake.
  • Take them out for a bit of cooling and you ready to hit the yum buds.
