Healthy Coconut and Cucumber Salad

Hope the calories are under control and every one is sweating it out. Today we have something different yet very healthy and tasty. Yes tasty and healthy!!!


Coconut and cucumber salad: easy to digest. good for health and yet not heavy on calories.


INGREDIENTS:

1/2 red onion, thin sliced

2 cucumbers (or chose the number according to the serving people), cut into thirds crosswise

1 cup unsweetened large-flaked coconut( you can buy it ready made from the market or just grate the dry coconut at home in a choice of flakes you like.

2 tablespoons coconut water

1 tablespoon fresh lime juice (from 1 lime)

2 teaspoons sugar, plus more for seasoning

Sea salt or kosher salt whatever is available.


METHOD:

Place onion in a bowl of ice water. Let onion in for 10 minutes, then drain.

Slice cucumbers thinly lengthwise with a peeler and place in a large bowl.

Add onion and coconut and gently toss to mix it up. Add coconut water, lime juice, sugar, and 1 1/2 teaspoons salt and gently toss again to mix well. Refrigerate until chilled, minimum 30 minutes and maximum  3 hours. Before serving, season with salt and sugar or you could throw in some red grapes or berries for additional fruity taste.


You can have this at night when you feel like having something very light or just any other time during the day to just jazz up your life with fresh taste.
